Apple Cider Brined Pork Tenderloin Barbecue Recipe

What you will need for this barbecue recipe:

  • Pork tenderloin - 1.5 to 3 pounds or so. You want the whole pork tenderloin for this barbecue recipe. While you can use the rest of the loin, the best meat is the narrow, tapered tenderloin. I just use that, not the whole loin. However, you can use the same brine for other cuts of pork such as loin chops.
  • 4 cups apple cider - preferably unfiltered, do not use plain apple juice as this often has lots of water and sugar added.
  • 3 1/2 cups water
  • 1/2 cup sea salt
  • 1/2 cup packed brown sugar
  • 3 tbsp coarsely ground black pepper
  • 2 tsp dried rubbed sage
  • 1 tsp ground cinnamon
  • Olive oil
  • Pepper
  • Herbes de Provence - A mix of herbs native to the south of France such as rosemary, thyme, lavender, fennel, sage, etc.
  • Additional apple cider and brown sugar and good herb red wine vinegar for a basting mixture

How to cook it:

  1. Mix the cider, water, salt, sugar, pepper, sage and cinnamon together in a large bowl. Mix thoroughly until all the sugar and salt have dissolved.
  2. Poke the tenderloin several times with a fork and add to the brine.
  3. Cover the tenderloin with a plate or spoon to keep it completely submerged.
  4. Cover in a large bowl or tupperware and refrigerate overnight or up to 2 days.
  5. Drain the brine and discard.
  6. Pat the tenderloin dry with a paper towel.
  7. Rub the surface of the pork tenderloin with a couple tablespoons of olive oil.
  8. Sprinkle with freshly ground black pepper and a couple large pinches of the herbs and push them into the surface of the meat with your hands. You don't need to add additional salt before cooking since the brine had a high salt content.
  9. Prepare a basting mixture of a few tablespoons of apple cider, a tablespoon of herb red wine vinegar and a tablespoon of brown sugar.
  10. Grill the tenderloin on a barbecue or fire pit. I prefer to lightly sear the pork tenderloin on all sides over high direct heat first for this barbecue recipe. Then I move it to a slightly less hot part of the grill, cover the grill and let it finish cooking there.
  11. Baste the pork tenderloin occasionally while cooking.
  12. The tenderloin is rather small, so it cooks quickly. When it feels like it is firming up, start to test for doneness with a meat thermometer inserted into the thickest part of the meat. For this barbecue recipe, I like the internal temperature to be about 150 degrees. By the time it is done, it should have acquired a nice glazed, caramelized surface color.
  13. Remove the tenderloin from the grill, place on a platter and cover with aluminum foil.
  14. Let the meat rest for 15 minutes before carving it, slicing it neatly into medallions.
  15. Serve one or more medallions to each guest along with your favorite accompanying side dish. I particularly like serving this with a side of caramelized onions.

Other cooking tips: I like to add some nice smokey flavor by using some smoking chips when cooking this recipe. While apple wood is an obvious choice for this barbecue recipe, it can work well with others like hickory as well. If you prefer, this recipe can be made in the kitchen, first searing the tenderloin in a pan and then roasting at 450 degrees while basting until the interior temperature is 150 degrees.

Lasagna Rolls with Roasted Red Pepper Sauce

Ingredients

* Lasagna:
* 8 uncooked lasagna noodles
* 4 teaspoons olive oil
* 1/2 cup finely chopped onion
* 1 (8-ounce) package presliced mushrooms
* 1 (6-ounce) package fresh baby spinach
* 3 garlic cloves, minced
* 1/2 cup (2 ounces) shredded mozzarella cheese
* 1/2 cup part-skim ricotta cheese
* 1/4 cup minced fresh basil, divided
* 1/2 teaspoon salt
* 1/4 teaspoon crushed red pepper
*

Sauce:
* 1 tablespoon red wine vinegar
* 1/4 teaspoon salt
* 1/4 teaspoon freshly ground black pepper
* 2 garlic cloves, minced
* 1 (14.5-ounce) can diced tomatoes, undrained
* 1 (7-ounce) bottle roasted red bell peppers, undrained
* 1/8 teaspoon crushed red pepper

Preparation

To prepare lasagna, cook noodles according to package directions, omitting salt and fat. Drain and rinse under cold water. Drain.

Heat oil in a large nonstick skillet over medium-high heat. Add onion, mushrooms, spinach, and 3 garlic cloves; sauté 5 minutes or until onion and mushrooms are tender. Remove from heat, and stir in cheeses, 2 tablespoons basil, 1/2 teaspoon salt, and 1/4 teaspoon crushed red pepper.

To prepare sauce, place vinegar and remaining ingredients in a blender; process until smooth.

Place cooked noodles on flat surface; spread 1/4 cup cheese mixture over each noodle. Roll up noodles, jelly-roll fashion, starting with short side. Place the rolls, seam sides down, in a shallow 2-quart microwave-safe dish. Pour 1/4 cup sauce over each roll, and cover with heavy-duty plastic wrap. Microwave at high 5 minutes or until thoroughly heated. Sprinkle with 2 tablespoons basil.
